So, here’s another TIP, easy, easy ….
For 4 persons: 16 Prawns, fresh basil, garlic, 2 tomatoes, 1 cup white wine, 50 g pine nuts, 1 lime, 2 bunches of arugula, fresh parsley, olive oil, Salt and pepper. Shell the prawns, leaving tails attached. The marinade: blend the basil, a clove of garlic, the grated rind of a lime and some olive oil. Put the mixture into a bowl, combine pine nuts, salt and pepper. Cover and put to rest in the fridge. The tomatoes sauce: in another bowl, place the tomatoes cut into cubes, add the grated rind of the lemon, 2 tablespoons of chopped parsley and a little oil, salt and pepper.
Sauté the shrimp in a pan with some oil for 3 or 4 minutes.
Put the arugula on plates, arrange the Prawns on the arugula and dress with the tomato sauce and the marinade with basil.
Garnish with lemon wedges and basil!
